Pâte à Choux
1/4 litre water – de litre d’eau
100 g butter -de beurre
4 g salt – de sel
7 g sugar – de sucre
150 g flour – de farine
225 g eggs – d’oeufs
Bring the water to the boil with the salt, sugar and the butter. Take the pan from the heat and add the flour mixing thoroughly with a wooden spoon.
Return the mixture to the flame and dry the pâte for half a minute.
Put the dried pâte into a bowl and add the egg little by little.
Using a piping bag make eclair or chouquette shapes on a greaseproof sheet.
Cook for 15/20 minutes for Chouquettes, and 25/30 minutes for Eclairs at 180/200°.
Porter d’ebullition l’eau, le sel, le sucre et le beurre.
Retirer la casserole du feu et incorporer la farine puis faire dessècher la pâte.
Debarrasser la pâte dans iun recipient et incorporer petit à petit les oeufs.
Dresser sur une plaque beurrée.
Cuisson 15/20mn – four 180 à 200° porte entrouverte (pour retirer la buée)
Crème Patissière
834 g milk – de lait
42 g sugar – de sucre
67 g de poudre à flan (cornflour and vanilla)
167 g sugar – de sucre
137 g egg yolk – de jaunes d’oeuf
84 g butter – de beurre
Add the milk and the sugar to a saucepan and bring to the boil. Mix the egg yolks with the poudre à flan and sugar. Add a little boiling milk and mix well.Pour all of the mixture into the pan and bring to the boil stirring constantly until thick and creamy. Add butter and continue to whisk until smooth and incorporated. Pour over a tray and cover with film and place to cool.
Dans une casserole, ajouter le lait at le sucre: porter à ebullition.
Melanger les jaunes avec le sucre et la poudre à flan: ajouter un peu de lait bouillant et delayer.
Remettre tout dans la casserole et la cuire jusqu’a l’obtention d’un crème epaisse. Ajouter le beurre et le fouetter jusqu’au bien incorporé et lisse.
Debarrasser cette preparation dans un bac, la filmer et la mettre au frigo.
I’m totally on board with this recipe but I’m going to have to search for that “big” sugar. My better half is a Frenchman and I’m always making his favorites. ….that big sugar!

Thanks Catherine, Macarons are so delicious. I hope you do find the sugar granules. They’re available everywhere here though my sister in law from Canada ended up stocking up here before she returned back home!
